Pav Bhaji Crostini
Ingredients:
For the crostini
- French baguette cut into chunks – 1 long bread
- Butter- 50 Gms
- For the Pav bhaji
- Zissto pav bhaji cooking sauce-250 Gms
- Potatoes- 200 Gms
- Cauliflower- 50 Gms
- Carrot- 50 Gms
- Green peas- 50 Gms
- Tomatoes- 30 Gms
- Capsicum- 20 Gms
- Salt to taste
- Butter- 50 Gms
For Garnish
Pomegranate seeds- 1 tbsp.
Coriander leaves- 1 tspn
Method
- Boil peeled cube potatoes, peeled cut carrots, peas and cauliflower together till they are well cooked
- Mash the vegetables and keep aside
- Chop green capsicum and tomatoes and keep aside
- Heat some oil in a thick bottomed pan add chopped green capsicum and chopped tomatoes, sauté for a minute.
- Now add Zissto Pav Bhaji cooking paste in the pan
- Add the mashed vegetables to the cooking sauce
- Mix well with the spoon
- Further mash it so that everything gets blended together.
- Add 175 ml of water in the empty sauce bottle shake well and add to the cooking vegetables.
- Cook further and mix well to get the right consistency
- Remove in a bowl and keep aside, toast the thick slices of French baguette and apply butter
- Pour a heap full spoon of pav bhaji on the toasted crostini arrange neatly in a platter.
- Garnish with pomegranate seed and chopped coriander leaves
